If my manager wants me to sign a write up form for something I didn't do, do I have to sign it?

No, you don't have to do it, however whatever document he is asking you to sign will be part of your permanent records with the company.

Nothing in the law is going to force you to sign it; however, you can legally be fired for refusing.
