Can you legally record a conversation with another person without them knowing in the state of Kansas
 
Does the LAW permit it? Yes. The state will not fine you or put you in jail for doing so.

However, the fact that you posted this in the employment law section means I'm going to make a guess about the situation, and warn you that just because you won't go to jail for it doesn't mean that your employer has to permit it or that you can't be fired for doing so without permission. He doesn't and you can be.

That answer does not change even if it's your employer you want to record.
 
Kansas is a one party consent is required state - therefore legal. However, as cbg noted, that doesn't mean an employer can't discipline you up to & including termination if you do.

Think twice before doing so.
