I am still feeling pain if I press my finger against it.I see absolutely no basis for personal jurisdiction in a U.S. court, so any suit would have to be brought in France, where she lives, or in the UK, where the alleged "abuse" occurred (and note that I asked how she "abused" you but you didn't answer that).
I also see virtually no substantive basis for a lawsuit. The only clear thing you've said is that she "had the access to airbnb bookings" (which I assume means that she booked accommodations), and then "just cancelled all accomandations [sic]." At most, you might have a claim for breach of an implied contract and that your damages might be the cost of whatever alternative accommodations you paid for. However, that cost would be capped by the cost of changing your return flight to an earlier day.
Even if you did sue in the U.S. and somehow get a judgment, what good will it do you? It will have cost you thousands of dollars in attorneys' fees, none of which would be recoverable. How would you enforce the judgment? I'm assuming this French resident doesn't have any assets in the U.S. on which you might levy to try and satisfy the judgment. If that's the case, then the only way to enforce the judgment would be to try and domesticate the judgment in France. That'll cost you thousands of additional dollars, and you might not be successful because a French court could decide that no personal jurisdiction existed in the U.S. (even if a U.S. court already decided that issue in your favor).
If a meaningless victor that costs you (tens of) thousands of dollars is of value to you, then you might be able to find a bad and unethical attorney willing to take your money. I submit, however, that the money would be better spent buying a dummy, slapping her face on it, and going out in the middle of nowhere and using it for target practice.
