My wife received a ticket for Failure to Inspect her car. Anyway the officer put down her old address on the ticket even though her license* and registration has her current address.

*In NJ when you change your address the DMV just sends you a sticker to put on the back of the license.

Is it possible for her to get out of the ticket if she goes to court?

the address is not one of the things that will get a citation thrown out. It merely servers a place for the court to send information of changes in court dates, or if you don't show up for court it would be the place that an arrest warrant for failure to appear would be served. Make sure your wife calls the court to see if the court date on the citation has changed.
