You may get out of it depending if the officer has his name on the original copy or court copy of the citation. You will not know this until you go to court and ask to see the original. Often a officer will add to a citation after you are gone. Just giving you the important information such as the code section you are charged with and the date of your hearing. There is a small space on the citation that an officer can add comments after you leave. Such as "driver stated that he did not see me due to fog on back window". That way if you go to court he will remember what you stated.
He may even add his name and badge number to the citation at this time. If you want to find out if the citation has his name on the court copy call the recorders court, give them the citation number and ask them who the officer was. If they tell you his name you know that he put it on the citation. If they can't or state that there is no name on the citation it should be an easy out for you because the court will not know who the officer is for your case either.

I'm not sure that this is a fatal error if your copy does not have the signature of the officer. It can be an issue if there is no copy and the court has no idea who issued the summons as there will be no officer to testify on behalf of the state! Let us know what happens. Good luck. :D
