Adjudication was withheld after being charged with a simple battery which had been an actual self defense( I pushed the drunk girl away from me after she lunged towards me thus resulting in her falling backwards and received a small bump on her head. Will this prevent me from receiving my Florida nursing license?

Hard to say, but it certainly will be an issue.

Why not ask the licensing board?

By the way, AW doesn't mean that no one can see the conviction, especially governmental entities.
