I currently live in Wisconsin and have completed the forms provided by the DHS. I will be moving to Norway with plans to stay for a number of years. I plan to remain an American citizen. I do not have any immediate family, do not own any property/home, nor am I married. Do I need a new Power of Attorney, will and/or living will or will my current forms be legal?

Some countries recognize US legal documents. But, you should inquire with the Norwegian consulate or embassy. Logic tells me that you'll have to complete your US documents again on Norwegian soil.
Or, at a minimum, have them translated into Norwegian.
