Arrest, Search, Seizure, Warrant Replevin - Paid for work and still no results on repairs

Is it possible to use a Replevin in this particular scenario.
I purchases a vehicle and at the same time wanted repair/restoration work performed on the vehicle. The bank said they would only issue one check, so I had to pay the shop completely up front for the vehicle and all repairs. It has been over a year now and the repairs to the car still have not been completed. Because of the time its taken, additional restoration has been done to the vehicle which has NOT been paid for for obvious reasons. However multiple times I was told it would be ready by a given date and each time only a small amount of required work was performed.
Could a replevin allow me to take the car, use another shop to make the repairs/restorations and then go after the deadbeat shop for the cost of the repairs, legal fees, etc.....?
Also, is it possible to go after him for damages related to the aggrevation:mad: of this hole thing. This corvette was supposed to be an Anniversary gift for my wife last year and he screwed that up and now this year she still isn't going to have it for this anniversary (2 in a row). Personnelly I think that alone is worth $2000 damages. which is what I still owe him in additional work I added mid way:D .

I thought this forum was to get help and ideas on how to handle legal issues?
This guy was paid $11,000(dollars) for services that have not been rendered. He's been draging this project on for almost 1year and 5months now. I would like to know what my legal option are here in Florida in dealing with this Turtle paced Corvette shop.
