I am in the process of renewing my lease. The corporate office for my apartment complex recently required all tenants to have renters insurance. I have no problem with this action. However, they are also requiring me to list the corporation that owns the apartment as a "interested party" on my renters insurance policy. The rental office told me that this requirement exists for 2 reasons: 1. so they are notified if the policy is canceled and 2. so they can collect on the liability if I am found negligent. I am not comfortable with a corporation listed on my renters insurance. Is there a legal way to provide them with proof of renters insurance but not list the corporation on the policy?

Many landlord require tenants not only to purchase renters insurance but to place their names on as interested parties. Many will not rent (or renew a lease) with a tenant who does not do this.
