I was recently suspended for one day from work. I was told that by my supervisor that while she hadn't checked our locator logs or our work charts (that record in real time), she had received an email from a coworker and her trainee, saying that they couldn't find me for over 3 hours and I had been sleeping on the job.

This is a total fallac, but because it was someone in a higher position than me, she took it as fact.

My question is two fold: does she have a legal obligation to check all cameras, real-time charts and locator logs to verify that I was actively working, and do I also have a right to view them to see that she isn't lying?

No to both. She is entitled to take the word of the other employee. Your employer is not a court of law and does not need proof beyond reasonable doubt.
