Consumer Law, Warranties salesman refuses to give back contracts

i have a salesman who refuses to give my company back signed contracts from customer who request my company to do work for them, he subsequently is out looking for a new job to sell the same services and i think he will use the info any way he can. what recourse do i have?

Write him a letter advising him he in possession of your company's property, which you consider to be stolen, and if he does not return it he will be facing criminal theft charges and will be sued in civil court for breach of his employment agreement with you. Get a lawyer to church it up for you.
