Hello,

If services have been rendered and used by someone, can they later sue you and say it wasn't what they wanted?
 
Anyone can sue anyone else for anything at all ... whether they could win or not would depend on the details.

Was there a contract for services? Was a description of the services to be provided included in the contract? Were their promises broken?

Ad nauseum.

So, yes, you can be sued ... no one can say whether the plaintiff will prevail, however.

There was a contract for services, but not a description of those services in the contract. Per the emails, I was instructed to "go crazy with color" and "use my judgement" and so I did, only to find out that what I chose was not to his liking. There were many emails with options for him to choose and he made comments about his likes, but always said he trusted my judgement. Of course I felt awful that he was disappointed so I offered him a credit for another event, however, he is now demanding the credit be a refund or he is going to pursue further action. Since he used the services and didn't ask that I remove them, I don't feel I should owe him anything. Am I damned if I do and damned if I don't?
 
Save those e-mails. If he tries to sue you, they might be useful to show that you gave him every opportunity for specific and direct input and the client CHOSE not to provide it and instead trusted your judgment.

The fact that you offered a credit for a future action would seem to indicate that you were attempting to be reasonable.

From what you write, you should fare okay ... but, the devil will be in the details.
