I sold my 1999 Ford Explorer AND transferred the title at the time of sale. The buyer was a friend of my father's trusted employee, so when she paid with a check I was a little hesitant but proceeded with the transaction anyways. Needless to say, I attempted to cash the check today and the bank said her account could not cover the funds. My father is speaking to his "trusted" employee tomorrow about this. But, what are my legal opportunities, if any, in this situation? Obviously, if they pay the money I'm not concerned, but what if they do not pay. The title was signed over. Do I have any options?

Thank you

You sue them. Whether in small claims court or regular court depends on the amount they owe. Alternatively, they transfer title back to you to avoid being sued.
