Small claims court in Oregon if there are two defendants do both of them have to be served each.

There could potentially be 100 defendants, but the plaintiff might only choose to sue one.

If you're the one, the other one gets away, unless you cross-claim against the other party.

I suppose your friend isn't being sued.

The plaintiff seems to dislike you more than she/he dislikes her.

Why do you think it matters if a friend/ roommate served you? As long as they are over 18 and not the one suing you it is valid.
