If I signed a lease for a Dec 1st move in, and my apartment (which is a gut renovation), won't be entirely completed until the 15th of December, but are allowing me to move in as early as the 5th, would I get reimbursed my money from the 1st to the 5th, or from the 1st to the 15th?

The 1st to the 5th, although they might cut you a break if there's still quite a bit of work to do.
