Whats my recourse to my ex roomate signing my name on the refunded deposit check without my knowing and permision and then cashing it
Shoplifting, Larceny, Robbery, Theft signing my name on a check without my knowlege and permision

Demand the roommate give the money back. If roommate refuses then contact police and make a theft report. If the check was several hundred or more this could be a felony. If less, a misdemeanor, but still theft.
If you don't want criminal charges against the roommate and believe you have enough information that proves the roommate did cash the check then you could consider filing a small claims case instead of making a police report.
